ZUCCHINI PANCAKES 
3 c. grated zucchini
4 eggs
1 1/2 c. freshly grated Parmesan cheese
1/4 c. finely chopped scallions
1/2 c. mayonnaise
1 tsp. lemon juice
Salt & pepper to taste
1/2 c. all-purpose flour
2 tbsp. vegetable oil
1 tbsp. butter

Garnish with sour cream and chives. Place grated zucchini between layers of paper towels and dry. In a large bowl combine all ingredients except vegetable oil and butter, until smooth batter is formed. Heat oil and butter in a skillet and spoon 2 tablespoons of batter for each pancake. Brown well on each side, flattening with spatula.
