CHEESE ZUCCHINI CASSEROLE 
1 lb. ground beef
1 med. onion
1 c. quick rice
1 tsp. salt
1/2 tsp. oregano
1 can cream of mushroom soup
1 1/2 lbs. zucchini
2 c. sm. cottage cheese
1 c. grated mild cheddar cheese

Slice zucchini and cook until tender in salted water. Saute beef and chopped onion until beef is lightly browned. Add rice and seasonings. Place half of zucchini in 2 1/2 quart casserole dish. Cover with beef mixture. Spoon on cottage cheese. Add remaining zucchini. Spread soup over top and sprinkle with grated cheese. Bake at 350 degrees for 35 minutes or until bubbly.
