CUBAN BLACK BEANS 
1 lb. black beans
1/2 lb. green pepper, chopped
1/2 lb. onions, chopped
1 can pimentos, chopped
3/4 c. olive oil
1/3 c. vinegar
1 tsp. sugar
Salt and pepper to taste

Clean and cook the beans in plain water as you would cook red beans, etc. (This may be done the day before.)

Saute the onion, green pepper, 1/2 can of chopped pimentos in 1/2 of the olive oil until tender. Add this to the beans. Add salt, pepper and sugar and let it cook over a low fire for approximately 3 hours or until thick. During this time add the remainder of the olive oil, the vinegar and the rest of the pimentos. Stores well in refrigerator.
