SAUERKRAUT CASSEROLE 
1/2 lb. diced bacon
1 lb. ground beef
1 med. onion, chopped
Butter (to dot)
1 qt. sauerkraut
2 c. mashed potatoes
Salt and pepper

Fry bacon until crisp. Drain and set aside. Brown ground beef and onion. Season with salt and pepper. Mix in bacon. Place in bottom of 2 quart casserole dish. Spread sauerkraut and liquid on top. Cover with mashed potatoes. Dot with butter. Cover and bake at 350 degrees for 30 minutes. Remove cover the last 5 to 10 minutes to brown potatoes. Serves 4 to 5.
