SAUERKRAUT CASSEROLE 
6 strips of bacon, cut into sm. pieces
1 sm. chopped onion
2 apples, peeled & diced
1 1/2 c. sauerkraut, drained
1/2 c. raisins
1/3 c. heavy cream (unwhipped)
4 c. mashed potatoes (add a pinch of nutmeg)
1/3 c. bread crumbs
Dabs of butter

In saute pan, fry bacon until crisp. Add onion and saute until tender; drain fat. Add apple and saute for approximately 3 minutes. Add sauerkraut and raisins; stir until tender.

Spoon sauerkraut mixture into a large, flat casserole and spread evenly. Pour cream evenly over sauerkraut. Spread mashed potatoes on top of sauerkraut. Spread bread crumbs on top and add some dabs of butter. Put casserole under broiler until browned. Serve with smoked sausage and applesauce.
