HOT ALASKA SALMON MELTS 
1 (15 1/2 oz.) can Alaska salmon
1/3 c. mayonnaise
2 tbsp. each minced parsley & onion
2 tbsp. drained, chopped pimiento
2 tsp. lemon juice
Dash pepper
3/4 c. shredded cheddar cheese, divided
8 slices French bread

Drain salmon; break into large chunks. Add mayonnaise, parsley, onion, pimiento, lemon juice and pepper; toss gently to mix. Fold in 1/2 cup cheese. Spread about 1/4 cup mixture on each slice of bread. Sprinkle remaining cheese over salmon mixture. Broil about 6" from heat 3 to 4 minutes or until cheese melts and tops are golden. Makes 6 to 8 servings.

Two cans Alaska salmon (7 1/2 - 7 3/4 oz. each) may be substituted.

Split English muffins or whole grain bread may be substituted.
