OLIVE CHEESE MELTS 
6 English muffins
2 cans (2.25 oz. each) sliced or chopped olives
1 1/2 c. grated cheddar cheese, about 6 oz.
1/2 c. thinly sliced green onions
1/2 c. mayonnaise
Parsley sprigs for garnish (optional)

Cut English muffins in half. Set aside. In a large bowl, mix together olives, cheese, onions, and mayonnaise. Spread mixture evenly over 12 muffin halves. Place on baking sheet. Broil 3 to 4 minutes or until cheese is bubbly and melted. Cut in half before serving. Garnish with parsley sprigs if desired.

HINTS: For a spicier version, mix in 1/2 teaspoon of either ground cumin or curry powder. For smaller servings, cut muffin halves into 4 triangles.
