STRAWBERRY PIE
1 qt. strawberries
1 c. sugar
1 c. boiling water
3 1/2 tbsp. cornstarch
Enough cold water to make paste with cornstarch
1 pastry shell, baked
1 c. whipping cream, whipped & lightly sweetened with powdered sugar

Bring to a boil and strain 1 cup of the smaller berries, sugar and boiling water. Now add cornstarch mixture. Cook over the fire for a couple of minutes, stirring constantly. Remove from fire and beat. Return to a slow fire and cook slowly until thick. Have ready a baked pie shell. Arrange the rest of the berries, which have been washed and picked over, in the pie shell. Pour the hot sauce over them. When cool, spread whipped cream that has been sweetened with powdered sugar over the top.

PASTRY SHELL:

1 1/2 c. flour
1/2 c. oil
2 tbsp. sugar
2 tbsp. milk

Mix above together in a bowl and put in a pie dish or pan. Makes a very flaky crust. Bake until done, 12 to 15 minutes. Cool. Fill with pie filling.
