CAJUN RICE SALAD 
2 c. water
2 c. Original Minute Rice or Minute Premium Long Grain Rice
1/2 c. prepared Good Seasons No Oil Italian Salad Dressing
1 1/2 tsp. hot pepper sauce
2 tsp. hot spicy prepared mustard
1 hard cooked egg, chopped
1/2 c. diced celery
1/4 c. sliced scallions
1/4 c. chopped parsley
2 tbsp. sweet pickle relish
2 tbsp. sliced stuffed green olives
2 tbsp. toasted chopped pecans
1 tbsp. diced dill pickle

Bring water to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Cool. Combine Italian salad dressing with pepper sauce and mustard in small bowl; blend well. Combine rice with remaining ingredients in large bowl. Spoon dressing mixture over salad, tossing to coat. Cover and chill. Makes 10 servings.
