OVEN FRIED POTATOES 
1 lb. baking potatoes, peeled and cut lengthwise into 8 wedges
2 1/2 tsp. olive oil

Heat oven to 375 degrees. On a lightly greased baking sheet, spread potatoes in a single layer and brush lightly with 1 teaspoon of olive oil. Bake, uncovered, for 5 minutes. Brush with another teaspoon of the oil and bake for another 5 minutes. Brush remaining oil and continue baking another 15 minutes or until the potatoes are crispy and tender.

Before serving, sprinkle potatoes with vinegar and salt, if desired.
