SOUTH - OF - THE - BORDER CASSEROLE | |
1 sm. chopped onion 2 tbsp. butter 4 c. corn chips (Fritos) 2 c. grated Cheddar cheese 1 lb. can chili without beans 1 lb. can kidney beans 1 (12 oz.) can Mexicorn One 2 quart casserole, melt butter 30 seconds. Saute onion 3 minutes, stirring once. Reserve 1 cup corn chips and 1 cup cheese. Combine remaining chips, cheese, chili beans and corn with onions. Blend ingredients and cook 6-9 minutes, turning 1/4 turn every 3 minutes. Sprinkle with reserved cheese and cook 2 minutes or until cheese is melted. Sprinkle remaining chips on top. Let sit 5 minutes and serve. Serves 4. 3rd Grade Teacher |
