OLD - FASHIONED OATMEAL COOKIES 
1 c. (2 sticks) unsalted butter, room temperature
1 1/2 c. packed dark brown sugar
3 tbsp. honey
2 eggs
1 1/2 c. unbleached all-purpose flour
1 tbsp. ground cinnamon
1 tsp. salt
4 c. old-fashioned rolled oats
1 1/2 c. chopped pecans
3/4 c. each raisins, chopped dates

Preheat oven to 375 degrees. Lightly butter cookie sheets. Cream the butter and brown sugar in a large mixer bowl. Beat in the honey and eggs until smooth. Sift the flour, cinnamon, and salt together. Stir into the butter mixture with a wooden spoon. Add the oats, pecans, raisins, and dates; stir until well mixed.

Shape the dough into 2 inch balls. Place about 9 balls on each cookie sheet, then flatten each with the palm of your hand to make large cookies. Bake until lightly browned, about 15 minutes. Immediately remove the cookies to wire racks to cook completely. 2 dozen large cookies.
