GREEN AVOCADO BREAD 
1/2 c. mashed avocado (1 sm.)
1 egg
1/2 c. buttermilk
1/3 c. vegetable oil
3/4 c. sugar
2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 c. pecans, chopped
Butter, soft

Preheat oven to 350°F. Grease a 9x5-inch loaf pan or 12 muffins pan.

In a medium bowl mix egg, avocado, buttermilk and oil until blended; add flour, sugar, baking soda, baking powder, salt and pecans. Mix only until blended; do not over mix.

Pour batter into loaf pan. Bake 55 minutes to 1 hour, until wooden pick inserted in center comes out clean. Cool 10 minutes. Turn out of pan. Slice and serve warm with butter.

Variation: For muffins pour batter into greased muffin cups, filling 2/3 full. Bake for 25-30 minutes.
