HASH BROWNS & EGGS CASSEROLE 
5 eggs
1/2 cup milk
3 cups frozen hash browns, thawed
1/3 cup chopped onion
1 1/2 cups cheddar or American cheese
4 slices cooked bacon

Preheat oven to 350°F.

Mix all ingredients except bacon and 1/2 cup cheese.

Bake in a 9x13x2-inch buttered baking dish (or a cast iron skillet) in preheated oven for 25 - 30 minutes.

Cover with remaining cheese and cooked bacon. Return to oven until cheese has melted. Let stand for a few minutes before cutting.

Serve with biscuits or toast.
