SHRIMP FRIED RICE 
1 c. shrimp
1 c. green onion, chopped
1 egg, slightly beaten
Salt & pepper to taste
2 c. cooked rice
1 to 2 tbsp. soy sauce

Saute shrimp and 1/2 cup green onion in heated oil, 1 to 2 minutes. Add eggs, salt and pepper; cook until egg is firm, stirring occasionally. Add cooked rice and soy sauce. Fry 5 minutes. Remove from heat and add remaining onion.
