BRAN MUFFINS 
1 c. raisins or chopped dates
1 tbsp. baking soda
1 c. boiling water
1 c. sugar
1/2 c. butter
2 eggs
2 c. flour
1/2 tsp. salt
1 c. 100% Bran cereal
2 c. Raisin Bran cereal
1 c. chopped walnuts
1 1/2 c. buttermilk
1 tsp. cinnamon
2 tbsp. sugar

In small bowl combine raisin/dates, baking soda and boiling water. Let cool. Cream sugar, butter and eggs together in large mixing bowl. Add flour and salt. Stir until blended. Stir in cooled raisin/date mixture. Add remaining ingredients. Stir just until mixture is combined.

Cover and refrigerate until ready to use. To bake muffins - line muffin tin with paper muffin cups. Fill each tin 2/3 full. Bake at 375 degrees for 20 minutes. May be frozen up to 2 months. Makes 4 1/2 dozen.

I use 1 cup 1% milk with 1 tablespoon lemon juice mixed together.
