CHILI CON QUESO 
1 med. onion, finely chopped
1 tsp. shortening
1 lg. ripe tomato, finely chopped
2 med. green chilies, finely chopped
2 tbsp. chili powder
1/2 tsp. oregano
1/2 tsp. salt
3/4 lb. Cheddar cheese, grated

Saute onion in the melted shortening. Add the tomato, green chilies, spices and salt and cook over low heat for 10 minutes. Stir in cheese until melted. Serve as a dip. Keep warm in chafing dish or fondue pot. Serve with tortilla chips.
