APPLE RAISIN MUFFINS 
1 3/4 c. flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. ground cinnamon
1 beaten egg
3/4 c. milk
1/3 c. cooking oil
1 c. chopped, peeled apple
1/4 c. raisins

Preheat oven to 400 degrees. In large mixing bowl - combine all dry ingredients. In separate bowl - mix all wet ingredients. Form a well in center of dry mix. Pour all at once wet ingredients into the well. Stir until moistened. Batter will be lumpy. Spoon into greased or paper cup lined muffin pan. Bake at 400 degrees for 20-25 minutes. Makes 10-12 muffins.
