CHEESY CARROT CASSEROLE 
4 c. carrots, sliced
1/4 c. butter
1 med. onion, chopped
1 c. Velveeta cheese, diced
Potato chips, crushed

Cook carrots until tender crisp, drain. Put in greased casserole. Dot with butter, stir in onion. Sprinkle with cheese. Top with crushed potato chips. Bake at 350 degrees for 30 to 45 minutes.
