CHEESY CARROT CASSEROLE 
4 c. carrots, sliced, cooked
1 sm. box Velveeta cheese
1 lg. onion
1/2 stick butter
Crushed potato chips

Layer carrots with cheese, saute onion in butter and spread over carrots. Top with crushed potato chips. Bake at 350 degrees for 40 minutes.
