CHINESE FRIED RICE 
1 c. rice, cooked
1/2-1 lb. cooked meat (leftover beef, pork, chicken or turkey)
1 onion, chopped
1/2 green pepper (optional)
1 egg (1/2 c. Egg Beaters)
2 tbsp. soy sauce

Saute onion in small amount of vegetable oil in skillet. Add pepper if desired. (I like it better without the green pepper.) Add the meat which has been chopped into bite-size pieces. Add the cooked rice. Add the soy sauce. Scramble the egg. Add to the rice and meat mixture. More soy sauce may be added to taste. Serve hot.
