SMOTHERED POTATOES 
1/3 c. vegetable oil
3 lb. potatoes, peeled and sliced
1 1/2 c. chopped onions
1/2 tsp. black pepper
2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. white pepper
1 1/2 c. water (or chicken broth)
1/2 c. green onions, chopped

In a cast iron pan, heat oil 1 minute. Then add potatoes, onions, salt, garlic, both peppers; stir. Let cook 10 minutes. Let potatoes stick before you stir.

Reduce heat and cook 20 minutes. Stir stir a scrape. Add 1/2 cup water, then cook 5 minutes longer. Add 1/2 cup more, then cook 5 minutes. Add last 1/2 cup of water and green onions. Stir and cook 5 minutes. Remove from heat and serve.
