STUFFED BAKED POTATO 
2 lg. Idaho potatoes
2 tbsp. butter
2/3 c. shredded Cheddar cheese
1/4 c. sour cream
1 tbsp. chopped chives
Salt and pepper to taste
4 slices bacon, fried crisp and crumbled

Bake potatoes in 400 degree oven until skins are crisp, about 1 hour. Be sure to wash and scrub potatoes first. Cut potatoes in half lengthwise. Scoop out all of centers and place this in bowl. Add butter; mash until smooth. Fold in cheese, sour cream and chives. Add salt and pepper and crumbled bacon. Mound mixture back into potato shells. Bake 15 minutes more.
