HUSH - PUPPY RECIPE 
Extra fat for deep frying
2 eggs, well beaten
1 tsp. salt
2 tsp. sugar
1/2 tsp. baking soda
1 c. buttermilk
1 1/2 c. cornmeal
1/2 c. sifted all-purpose flour
1/4 c. minced onion
1 tbsp. melted fat

Add more fat to skillet drippings to give a layer 1 1/2 inches deep. Heat slowly to 365 degrees.

Meanwhile, blend eggs, salt, sugar, soda and buttermilk. Add cornmeal, flour and onion. Blend. Stir in melted fat. Drop dough into hot fat, one heaping teaspoon at a time.

Cook to a medium brown color, turning once. Drain on absorbent paper. Serve hot. Yield: 3 dozen, 2-inch hush-puppies.
