HOMEMADE TOMATO SAUCE 
1/4 c. olive oil
3 cloves garlic, peeled and crushed
2 med. onions, chopped
16-20 very ripe tomatoes, peeled and chopped
1/3 c. dry white wine
1 tsp. oregano
1 tsp. basil
1 tbsp. sugar
1 1/2 tsp. salt
1 tsp. pepper

Saute onion and garlic in olive oil just until soft. Add all ingredients and mix well. Cover and bring to a boil over medium high heat. Reduce heat, remove lid and simmer for approximately 2-3 hours or until desired thickness, stirring occasionally. Makes approximately 2 quarts.

(If sauce does not thicken to your liking, add 2-3 tablespoons tomato paste before serving).

Bring ingredients to a just a slow rolling boil (bubbling but not quite a boil). A full boil will make even the best Tomato taste acidly. Never ever done in Northern or Southern Italy.
