EGGLESS CORN MUFFINS 
1 c. cornmeal
1/2 c. flour
1/4 c. sugar
1 tsp. salt
2 tsp. baking powder
1 c. milk
2 tbsp. melted shortening

Sift and mix together the dry ingredients. Add milk and shortening. Pour into greased muffin pans and bake in a moderate oven, 350 degrees, for 30 minutes. I use skim milk and butter to cut out cholesterol.
