MOLDED CRANBERRY AND ORANGE
SALAD
 
1 tbsp. gelatin
1/4 c. water
1 qt. cranberries (4 c.) washed
2 sm. oranges
3/4 - 1 c. sugar
1/4 c. water
1 pkg. lemon gelatin (3 1/4 oz.)

Soak gelatin in 1/4 cup water. Wash cranberries. Cut oranges into quarters, remove the seeds. Put the oranges and cranberries through a meat grinder or food processor. Reserve the juices.

Dissolve over heat the sugar in 1/4 cup water. Add lemon gelatin and the soaked gelatin over heat. Stir until the gelatin is dissolved. Add the ground up fruit. Place the salad in a mold. It is also fine in a ring mold. Chill until it is firm. Unmold it on lettuce and serve with mayonnaise.
