GREEN PEA MOUSSE 
1 env. Knox gelatin
2 c. cooked green peas
1/8 tsp. white pepper
1/2 tsp. salt
1 c. boiling water
1 c. sour cream

OPTIONS:

1 tbsp. minced onions or chives
1 tbsp. fresh mint, chopped
Pinch sugar
Dash nutmeg
Pinch rosemary

In container of blender put gelatin and boiling water. Cover and blend at high speed for 40 seconds. Add peas and seasoning. Cover and blend 40 seconds more. Add sour cream and blend briefly. Pour into 3 cup mold and chill until firm. Unmold on plate.

Cook 12-17 snow peas for 1-2 minutes. Drain. Cut in half. Chill and arrange on edge of plate on top of unmolded mousse. May decorate with fresh mint leaves arranged in petal fashion with peas as center for mint petals. Serves 4-6.
