DIET ORIENTAL CHICKEN 
16 oz. chicken breast
2 oz. fresh mushrooms
2 oz. fresh broccoli sprigs
1/2 oz. fresh green pepper
1 lb. can of sliced pineapple
1 orange, cut in half
1/4 tsp. salt light
1/4 tsp. black pepper
1/2 tsp. ground garlic
1/8 tsp. ground ginger
1 c. dry white wine
1 tsp. honey
1/2 c. brown rice

Prepare 1/2 cup brown rice. Spray bottom of large non stick fry pan with Pam. Remove all skin, fat from breast and slice in 3/4 inch strips, brown at 300/325 degrees. Slice pineapple to 1 inch, add with juice. Add salt, pepper, ginger, and garlic. Add juice of orange and thinly sliced 1/4 orange peel. Add 1 tsp. honey. Reduce heat and simmer 20 to 30 minutes until only approximately 1/4 cup juice remains. Toss in mushrooms, broccoli simmer 5 minutes, then add wine and simmer 5 more minutes. Place brown rice on preheated platter, pour chicken contents over rice. NOTE: Very good cold also.
