BANANA CAKE | |
1/2 c. butter 1 c. brown sugar 1/2 c. white sugar 2 eggs (I use Egg Beaters for substitute) 1 c. banana, mashed (4 med.) 4 tbsp. sour milk 1 tsp. baking soda 1 1/2 to 1 3/4 c. flour (I use half whole wheat & half whole flour) 1/2 c. nuts, chopped I also substitute wheat germ for 1/2 or 3/4 c. flour Cream butter and sugars until blended; add eggs and beat until smooth. Add the flours which have been mixed together alternating with the sour milk (in which you have dissolved the baking soda in); add nuts. Pour into 9 x 9 inch greased and floured or sprayed Pam pan. Bake at 350 degrees (about 25 minutes) or until done (when toothpick inserted in center of cake comes out clean). Cool on wire racks. |
