MICRO BEEF IN SQUASH HALVES 
Acorn squashes - 1/2 per person
Ground beef - 1/4 lb. per person
Chopped apples - 1/2 of med. apple per person
Raisins - 1 tbsp. per person
Salt - 1/4 tsp. per person
Ground nutmeg - pinch per person
Sugar - 1 tsp. per person
Melted butter - 1/2 tbsp. per person

Place pierced squashes 2 inches apart in microwave oven. Microwave on HIGH 6 minutes. Cut in half, top to bottom (stem to bottom) and remove seeds. Put in baking dish; cover tightly and microwave until tender, 6-9 minutes longer. Let stand for 3 minutes.

Crumble and cook beef just until pink is gone. Use fry pan, or microwave in covered casserole, loosely covered, on HIGH 5-6 minutes, stirring once. Drain; add apple, salt, raisins, nutmeg.

Scoop squash from shells, leaving 1/4 to 1/3 inch thick shell. Mix squash with meat and put back into shells. Sprinkle sugar over mixture. Drizzle with butter.

Either cover and refrigerate until half hour before serving, then remove from refrigerator, wait 15 minutes, microwave, covered, on HIGH 10-12 minutes, uncover and let stand 3 minutes.

Or immediately after final preparation of mixture, microwave, covered, on HIGH from 7-9 minutes and let stand 3 minutes.

NOTE: If preparing ahead of time, and refrigerated, it must be tightly covered, and should wait only up to 24 hours.

Since microwave ovens vary in power, you may need to adjust your cooking time.
