PINEAPPLE MALLOW PIE 
1 baked pie shell
32 lg. marshmallows or 3 c. miniatures
1 (8 3/4 oz.) can crushed pineapple, use juice
1 tbsp. lemon juice
1 1/2 c. chilled whipping cream

Bake and cool pie shell. Combine marshmallows, pineapple and lemon juice in a quart casserole. Place in microwave for 2 1/2 minutes, stirring often until marshmallows are blended. Chill until partially set. In chilled bowl bat cream until stiff. Fold in pineapple mixture. Pour into pie shell. Chill until set. Garnish with chopped almonds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
