VEGETABLE AND CHICKEN STIR FRY 
3 c. minute rice or 2 c. raw rice
6 boneless, skinless chicken thighs, cubed
2 tbsp. butter
2 sm. zucchini squash
1 sm. yellow crookneck squash
3 green onions
2 eggs, beaten
1 (10 oz.) pkg. frozen broccoli
1 c. & 2 tbsp. soy sauce
2 tbsp. sherry

Cook white rice according to package directions. Stir fry chicken. Mix together 1/2 chicken, zucchini, onion with 2 tablespoons soy sauce and 2 tablespoons sherry. Mix together 1/2 chicken and vegetables.

Melt 2 tablespoons butter in pan and saute vegetable - chicken mixture. Add 1/4 cup soy sauce. In separate pan, mix together remaining chicken, white rice and 3/4 cup soy sauce. Stir fry 5 minutes. Add eggs. Cook until eggs are done. Serve. Serves 6.
