RHUBARB BREAD PUDDING 
3 eggs
1 1/4 c. sugar
1/4 c. melted butter
3 slices bread
3 c. chopped rhubarb
1 tsp. cinnamon

Preheat oven to 350 degrees. Mix all ingredients. Put in a casserole. Bake 45 minutes. Serve warm or cold with whipped cream or ice cream.
