RHUBARB COMPOTE | |
12 stalks fresh rhubarb 1/4 c. water 2/3 c. sugar Wash and scrape stalks, discarding leaves. Cut stalks into 1/2 inch pieces. Combine in skillet with sugar and water. Cook over low heat, until rhubarb is soft. Taste for sweetness, adding sugar if necessary. Serve 4-6. |
