VEAL PIQUANT 
1 1/2 lb. veal cutlet or chops
1/3 c. onions, chopped fine
1/2 c. chopped celery
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1 tsp. sugar
Few grains garlic salt
3 tbsp. salad oil
1/2 c. lemon juice
1/4 to 1/2 c. water

Wipe veal with damp cloth. Cut into serving pieces. Sprinkle with celery and onion. Prepare marinade of other ingredients. Use shallow pan. Allow to stand in marinade 1 1/2 hours. Heat fat in large frying pan. Drain veal. Brown on both sides. Pour marinade over meat, cover and simmer for 3/4 hour. Serves 4-6.
