CITRUS FRUIT SALAD | |
1 sm. head cabbage 2 med. oranges 3/4 c. mayonnaise 1 lg. banana, sliced 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. dry mustard About 25 minutes before serving, remove 5-6 outer leaves from cabbage. Shred cabbage as for slaw. Grate enough peel from orange to make 2 teaspoons. Stir orange peel, mayonnaise, sugar, salt and mustard until well mixed. Peel oranges and chop. Add oranges, cabbage and bananas to mayonnaise mixture and gently toss until well coated. Line salad bowl with reserved cabbage leaves and fill with mixture. Serves 8. |
