VENISON SAUSAGE 
1 3/4 lbs. ground venison
1 3/4 lbs. ground pork (fatty)
1 tbsp. salt
1 tsp. red cayenne pepper
1/8 tsp. garlic powder
1 tsp. cumin
1 tsp. poultry seasoning
1/8 tsp. sage
1/8 tsp. curry powder
1 tsp. dried mint

Mix all of the ingredients well and make into patties.

Note: Good idea to grind the pork and venison together, grinding twice.
