HONEY MARSHMALLOWS 
3/4 c. raw or brown sugar
1 c. honey
1 1/2 tbsp. unflavored gelatin
1/3 c. water
1/4 tsp. salt
1 tsp. vanilla
2 c. walnuts or pecan nutmeats (or dried fruit, such as raisins or dates)

Pour water in small pan and sprinkle gelatin on top. Allow to stand 5 minutes. Place pan over medium heat, stir until dissolved. Add sugar, stirring until it is dissolved. DO NOT BOIL. Add honey, salt and vanilla. Pour all into 1 1/2 quart bowl and beat until cool and tacky.
