VELVET PUMPKIN CAKE 
1 1/2 c. Bisquick baking mix
1/2 c. sugar
3/4 c. pumpkin
1 egg
2 tbsp. shortening
1 tsp. vanilla

Heat oven to 350 degrees. Blend all ingredients in large mixer bowl on low speed 1/2 minute, scraping bowl frequently. Beat 4 minutes at medium speed. Pour batter into greased and floured 8-inch square pan or round 9-inch layer pan. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Serve warm with whipped cream.
