MOLDED FRUIT DESSERT 
1 c. water
1 c. apricot nectar
1/2 c. apple juice
1 tbsp. lemon juice
5 tbsp. agar flakes
3 caffein-free orange spice tea bags
1 c. strawberries, sliced
2 peaches, sliced
1 banana, sliced
1/2 c. blueberries, fresh or frozen

Bring water, apricot nectar, orange juice, lemon juice and agar to a boil. Reduce heat and simmer five minutes, stirring occasionally. Remove from heat, add tea bags, cover pan and let tea steep five minutes. Remove tea bags, pour mixture into a mold prerinsed with cold water, and refrigerate until mixture starts to set, about 20 minutes.

Meanwhile, prepare fruit. When agar mixture is ready, gently fold in fruit. Refrigerate until set. Unmold and garnish as desired. Serve plain or top with plain soy yogurt, whipped tofu topping, or natural vanilla or rice dream soybean ice cream.
