RUSSIAN MINT PIES 
1 c. butter
2 c. powdered sugar
4 eggs
4 sqs. chocolate, melted
1 tsp. peppermint flavoring
2 tsp. vanilla
2 c. crushed vanilla wafers or graham crackers

Cream butter, powdered sugar, and eggs (one at a time). Beat well. Add flour and melted chocolate. Spoon 1/2 of crumbs in bottom of cupcake liners. Spoon mixture into liners and cover with rest of crushed wafers. Top with a dab of whipped cream and a cherry. Place in freezer until time to serve. Makes 24 pies.
