ZUCCHINI PIE 
3 c. diced zucchini
1/2 c. parmesan cheese
1 onion chopped
1 c. cooking oil
1/4 tsp. salt and pepper
1 tbsp. parsley flakes
1 c. Bisquick mix
4 eggs

Mix all ingredients except parmesan cheese. Pour in shallow baking dish. Sprinkle top with the parmesan cheese.

Bake at 350°F for 45 minutes.
