ZUCCHINI PIE 
1 c. Bisquick
1/2 c. + 1/2 tbsp. oil
4 eggs beaten
3 zucchini sliced thin
1/2 c. grated Parmesan cheese
1 onion finely chopped
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1 tbsp. parsley

Mix all ingredients. Pour into a greased 9 inch pie pan.

Bake at 350 for 30 minutes. A knife inserted in the center should come out clean.

Recipe can be doubled using a 9x13 pan.
