FRIED BEAN CURD (TOFU) 
3 sq. tofu
2 cloves minced garlic
1 tbsp. minced onion
1 tbsp. minced ginger root
1 tsp. salt
1 tbsp. soy sauce
1 tbsp. sugar
1 tbsp. vinegar
1/2 c. water

Cut tofu in 1 1/2 inch pieces and lightly brown in oil (turn it carefully); set aside. In 2 tablespoons oil fry the garlic, onion, ginger (and a little Chinese chili sauce if you dare). Add the fried bean curd and salt, soy sauce, sugar, vinegar, and water; bring to boil.

Add 2 teaspoons cornstarch to thicken the sauce. Sprinkle a little sesame oil (nice flavor!) and chopped green onions on top. Serve hot as a side dish at a Chinese meal.
