RICE PUDDING 
2 eggs, beaten
2 c. cooked rice
1 c. evaporated milk
1/2 c. sugar
1/2 c. raisins
1/2 c. water
1 1/2 tsp. vanilla
1/4 tsp. salt
1/4 tsp. cinnamon or nutmeg

Mix all ingredients in a 2 quart bowl. Pour mixture into a greased 1 1/2 quart baking dish. Set dish in a shallow pan holding 1 inch of hot water. Bake 45 minutes, or until pudding is firm at edges.
