LEMON POPPYSEED MUFFINS 
2 c. sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
1 tsp. lemon juice
1 tsp. lemon peel
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1 c. plain yogurt
3 tsp. poppy seed

Preheat oven to 375 degrees. Cream together sugar and butter. Add eggs, vanilla, lemon juice and lemon peel. In a separate bowl, combine flour, salt, poppy seed, baking soda and baking powder. Add flour mixture to egg mixture alternately with yogurt. Fill muffin cups 3/4 full. Bake for 20 minutes.
