SHRIMP COQUILLES 
1 lb. shelled shrimp
3 oz. pkg. cream cheese, softened
4 tbsp. crumbled Blue cheese
1/4 tsp. salt
1/8 tsp. pepper
Dash of Tabasco or cayenne
1 tbsp. lemon juice
4 tbsp. milk
1/4 c. bread crumbs
2 tbsp. butter

Beat together cheese, salt, pepper, Tabasco, lemon juice and milk. Place shrimp in boiling, salted water. Turn off heat and let shrimp remain covered in water 5 minutes; remove and drain.

Add shrimp to cheese mixture. Divide into 4 portions and place in ovenproof clam shells, ramekins or individual shallow casseroles. Top with crumbs and dot with butter. Bake in preheated 375 degree oven for 20 minutes or until cheese is bubbly and crumbs are brown.
