HARVEST VEGETABLE 
4 med. carrots, thinly sliced
1 (10 oz.) pkg. frozen chopped broccoli, thawed & drained
1 1/2 c. French fried onions
5 sm. red potatoes, sliced 1/8" thick
1 (8 oz.) jar processed cheese spread
1/4 c. milk
Black pepper & salt to taste

In 8"x12" baking dish, combine carrots, broccoli and 1 cup French fried onions. Tuck potato slices into vegetable mixture at an angle. Dot vegetables evenly with cheese spread. Pour milk over vegetables; sprinkle with seasonings as desired. Bake, covered at 375 degrees for 30 minutes. Top with remaining onions, bake, uncovered 3 minutes or until onions are golden. Makes 6 servings.
