POTATO HAM SCALLOP 
2 c. cubed cooked ham
6 to 8 medium potatoes peeled and thinly sliced
1/4 c. finely chopped onion
1/3 c. all purpose flour
2 c. milk
3 tbsp. fine dry bread crumbs
1 tbsp. butter (melted)
2 tbsp. finely snippped parsley (if desired)

Place half the ham in a 2 quart casserole. Cover with half the potatoes and half the onion. Sift half the flour over, season with salt and pepper. Repeat hayering ham, potatoes, onion. flour and seasoning. Pour milk over all. Bake covered at 350 degrees until potatoes are nearly tender, 1 to 1 1/4 hours. Uncover. Combine breadcrumbs and melted butter, sprinkle on top at casserole. Top with parsley. Bake 15 minutes longer. Serves 4 to 6.
